Hi girls,
I just wanted to post 3 new foods that I am loving while being VERY restricted in my diet!
1) plantains: buy them green, (they look like large bananas) peel and thinly chops them. Put them in a bowl with 1 T of coconut oil and stir to coat. Add a few shakes of salt or cinnamon. Transfer them to a single layer on a baking sheet. Cook on 400 for 15-20 minutes. Watch them so they don't burn but get them as close as possible to that point. Let them cool briefly and enjoy. I like to dip them in guacamole or salsa.
2) Bok choy: it looks sorta like a head of romaine lettuce; chop of bottom and chop the rest like lettuce. I wash it in my salad spinner then transfer to a ziplock for easy access. Raw, it is so yummy, crunchy like celery but juicier and milder. I can't eat it that way, so I saute it with salt and coconut oil. Still crunchy and juicy as a yummy side to scrambled eggs or meat! I also sub it in my soups for celery because I can't eat celery right now.
3) okra! Our favorite veggie side right now is baked okra. Yes, its not our beloved fried and coated stuff, but its so good and good for you! slice fresh okra, drizzle olive or avacado oil over it. Lay it out on that baking sheet and cook 400 for 20 min! yum yum!
